Be The Change

Lost Creek Micro Farm is a working urban farm providing seasonal,

ultralocal food for all people.

We believe farms like ours can be the urban rule, not the exception.

There's something reverent - grounding - humbling - motivating about placing a seed in soil and watching it grow.

Between the furrows we find equal parts science and mystery, live in the space between control and surrender,

and play roles that turn from participant to witness

then back again.

Over the years, we planted ourselves into larger and larger gardens, adding bees, then chickens.  Our lessons come from the earth-stained hands and fertile minds of relatives, friends and guides.  We are encouraged by those who know our hearts and see we're at our best in the field.  When the days grow hot and long, inspiration comes from curious neighbors and the smiles we see on Farm Stand day.

And when our kids and their friends ask for farm chores, we know we're on to something good!

Welcome to Lost Creek Micro Farm.

Visit us!  We may grow something you fancy.  You may be invited to eat a flower.

And if you're in the neighborhood and you see us in the field,

give a little beep!beep! or a Hey you!

We promise to look up from the dirt, smile and wave.

THE SECRET TO MAKING BEEF TARTARE AT HOME

Chef Chris Starkus & Potluck with Ali

There are few dishes as popular at restaurants as beef tartare. And yet despite being among the easiest to execute, most people stay away from it at home. Raw beef in a restaurant setting seems fine, but there is some kind of mental block to making it yourself. But is it really just as easy for home cooks?

Luckily we had the perfect person to answer this conundrum - Chris Starkus, the chef at Denver’s steakhouse Urban Farmer also operates Lost Creek Micro Farm , so he knows about sourcing from a multitude of perspectives. We got his breakdown of what to look for when purchasing meat for serving raw, the best cuts to buy and the perfect recipe to make it all come together. You might not get to be on a cattle ranch in Denver, but you can come pretty close.

Watch the video below and then follow the recipe to make it for yourself.
